Welcome to my blog! Here is a little information about myself: I am married to my amazing husband Milton for over five years and we have a beautiful three year old daughter, Abby. The reason why I started this blog is to share my journey in hopes that it could help someone else. I will be posting about marriage, motherhood, our infertility journey, and family recipes.

Twice Baked Potatoes in a Casserole

Growing up I always remember my mother making these Baked Potatoes stuffed with lots of Kraft American cheese and lots of butter. My siblings and I use to enjoy them every single time my mom made them. Now that I am an adult and a mother, I do make them once in a while for my family but I try to limit myself since dairy and [processed foods causes inflammation for me. Anyway, I made them for our Game of Thrones party last weekend and everyone had seconds and thirds. When my friend asked for the recipe the following day, I began to instruct my friend how I made it and I realized I could make healthier choices for this family recipe and so I decided to make it into a casserole and use cheddar cheese instead of the Kraft processed cheese and it came out even better than before. Hope you all enjoy this delicious cheesy dish!


Ingredients

10-12 yellow golden potatoes

1 cup of medium cheddar cheese (grated)

1 cup of white sharp cheddar cheese (grated)

3 tablespoons of whipping cream

3 tablespoons of butter

1 teaspoon of salt

Pinch of pepper


STEP ONE Preheat the oven for 400 F. Wash, peel, and cut the potatoes in big chunks. Boil the potatoes in water until soft. Remove all the water from the pot and just leave the potatoes.


STEP TWO Mash the potatoes until all of the potatoes are smooth. Add the medium cheddar cheese, white sharp cheddar, whipping cream, butter, salt and pepper. Mix all together until the cheese looks melted. Bake in the oven for 30 minutes and broil Hi for 5 minutes until the top is look gold and crispy.
