HEY, EVERYONE! I'M CINDY.

Welcome to my blog! Here is a little information about myself: I am married to my amazing husband Milton for over five years and we have a beautiful three year old daughter, Abby. The reason why I started this blog is to share my journey in hopes that it could help someone else. I will be posting about marriage, motherhood, our infertility journey, and family recipes.

Rice with Garbanzo Beans and Veggies

Ingredients 1 cup of Trader Joe’s Sprouted California Rice: Brown, Red, & Black Rice (or just brown rice will work)

1 cup of garbanzo bean (or 1 can of garbanzo beans)

½ cup pancetta or sugar-free bacon

2 cups chopped spinach 2 garlic cloves, finely chopped 1 shallot; finely chopped

1 tablespoon oil 1 teaspoon ground cumin

1 small zucchini; grated

1 bell pepper, finely chopped

Salt and pepper to taste

**NOTE you can eliminate the meat part from the recipe and it can totally be a vegan dish, would still taste delicious!

STEP ONE cook the rice according to package directions.

STEP TWO cook the pancetta with 1 tablespoon of butter until fully cooked, then set aside.


STEP THREE in the meantime with the that oil heat in a large skillet over medium heat. Add shallots until softened and then add cumin, garlic, zucchini, bell pepper until softened.


STEP FOUR add the cooked garbanzo beans, then add spinach and let it wilt.


STEP FIVE and finally add the cooked rice to the mixture. Season with salt and pepper. Serve warm.
